PORK BELLIES

The belly of a pig is a boneless and fatty cut. Pork belly is used for a variety of Asian dishes and is used to make bacon. Bellies are usually cut into thick, long pieces and are flash froze. They are generally prized cuts since they keep for a considerably long time in a frozen state and are even an openly traded commodity.

FRESH HAM

Ham is the hind leg of a pig uncured. The hind leg of the hog is a single piece of meat. Ham can be either left salty as it is uncured or it can be cured, dried, and smoked to add certain flavors. Our fresh ham however is uncured and no sugar is added throughout the process.

PORK LOIN

The loin of a pig is a delicious cut along the top of the pig’s ribcage. This cut can be used to make pork chops or bacon. The bones can either be left in or out depending on flavor.

Bone-in Pork Loin, Boneless Pork Loin, Pork Loin Rib End, Pork Sirloin Bols, Pork Sirloin B/L and Pork Tenderloin.

PORK RIB

Pork ribs come in a variety of options from spare ribs to baby back ribs. Each cut offers a different taste and texture.

Loin Back, Pork Riblets, Pork Spare Rib and St. Louis style Pork.

PORK SHOULDER

The upper part cut of a hog’s shoulder and front leg is referred to as the Butt or a Picnic Ham depending on where the cut stops. Popular in the south this cut offers a lot of meat and flavor.

PORK CHOPS

Pork chops are a ribbed loin cut and are the pork version of beef rib eyes. The thick center cut chops is extremely flavorful as the pork belly meat is generally left attached.

PORK OFFAL

Offal refers to the internal organs and outer extremities of the hog. Whether cherry-picking a favorite delicacy or buying in mass for processing, offal offers a variety of tastes and textures many cuts do should not be shied away from. Pork Jelly, Chitterlings, and a variety of cuisine delicacies are made from pork offal.
